  • 11/2 tablespoons Dijon-style mustard
  • 1 1/4 teaspoons finely chopped fresh tarragon leaves
  • 1/4 teaspoon freshly ground pepper
  • 8 slices (1/4-inch-thick) egg bread
  • 2 tablespoons butter
  • 8 ounces Teleme cheese, cut into 16 slices (or use Monterey Jack)
