- 3 large eggs
- 11/2 tablespoons Dijon-style mustard
- 1 1/4 teaspoons finely chopped fresh tarragon leaves
- 1/4 teaspoon freshly ground pepper
- 8 slices (1/4-inch-thick) egg bread
- 2 tablespoons butter
- 8 ounces Teleme cheese, cut into 16 slices (or use Monterey Jack)

- 1/4 cup finely chopped red onion
- 1/4 cup finely chopped red bell pepper
- 1 tablespoon fresh lime juice
- 1 tablespoon chopped fresh cilantro
- 1/2 teaspoon sugar
- Salt and freshly ground black pepper, to taste
- 12 1-ounce spoonfuls California Teleme cheese
- 12 toasted baguette slices
