Yields 4 Servings
- 1/4 cup finely chopped red onion
- 1/4 cup finely chopped red bell pepper
- 1 tablespoon fresh lime juice
- 1 tablespoon chopped fresh cilantro
- 1/2 teaspoon sugar
- Salt and freshly ground black pepper, to taste
- 12 1-ounce spoonfuls California Teleme cheese
- 12 toasted baguette slices
- In a small bowl, mix red onion, bell pepper, lime juice, cilantro and sugar. Season to taste with salt and pepper.
- Place one spoonful of Teleme on each toasted baguette slice. Top with salsa. Arrange three baguette slices per serving on individual serving plates.
